Passion Fruit Martini Clam Spaghetti

FUNKIN COCKTAILS and I have come together to make sure we are all bringing the fun spirit of the festive season through to the new year, which means we want you all trying you new things with Funkin Cocktails #TryJan! I have created this insanely delicious Passion Fruit Martini Clam Spaghetti to get the ball rolling for you. Thinking outside the box for your cocktails, instead of just sipping on them, if you have extra from the holidays why not add them into your meals, invite your friends over and a fun and tasty meal too!

 

Cooking notes:

 

  • If you can’t get hold of clams you can use prawns or veg.

 

  • Funkin Cocktails can be bought at Tesco, ASDA, Morrisons and Sainsbury’s

Ingredients:

Begin by adding enough olive oil to coat the base of your pan. Place on a medium heat and add in your garlic and onions.

Sauté gently and allow your onions to sweat and become slightly translucent (3-4mins).

Add in your medium size tomatoes, place the lid on top of the pan and leave those to fry, release their juice and simmer in it for 15mins. We want them very soft, broken down and to have formed a textured tomato sauce. Cook on a low-medium heat.

In the meantime cook your spaghetti.

Add in your passion fruit martini to the tomato mixture, followed by the pepper and some salt to your taste. Leave to simmer with the lid off for another 5 minutes on a medium heat.

Add your clams and place the lid back on and leave the clams to cook and open up (about 10mins).

Once the clams and spaghetti are cooked. Add a ladle full of spaghetti water to the tomato clams, mix through.

Then add in your basil and cherry tomatoes, stir through.

Drain your spaghetti and add to the dish, mix through well and serve with more fresh basil and a glass of Funkin Cocktails Passion Fruit Martini. Enjoy!
