Coconut & Turmeric Baby Aubergine Stew

Baby Aubergines have been sprouting about the supermarkets and I have been buying them all! I don’t even have a story to entertain you with when it comes to this dish, although if you caught my Instagram post for my Aubergine Caper Salsa then you would have seen me talk about how Aubergines contain the most amount Nicotine out of all foods! Yup, Nicotine. So, it’s totally great for suppressing your hunger, an might be a valid reason why you could develop an addiction to them….

This stew comes out more on the thick side. I don’t even know if I should call it a stew or just a sauce…. It works perfectly as a starter with some fresh Sim Sim Bread. However, I enjoy mine as a main with a side of fluffy white rice!

Ingredients:

  • 10 Baby Aubergines or 2 Large Aubergines

  • 400ml Coconut Milk

  • 100ml Water

  • 1 Large Onion (Thin Slices)

  • 2 Fresh Chillies (Finely Chopped)

  • 2 TSP Turmeric Ground Powder

  • 2 TBSP Garam Masala

  • Salt

  • 2 Lemons

Method

  1. If using baby aubergines, slice them in half, length ways. Alternatively with the big aubergines chop them into small cubes.

  2. Place your sliced onions into a medium sized saucepan, with a table spoon of oil and place the lid on top and allow them to sweat for about 3 minutes till they are slightly transparent.

  3. Once the onions are ready add in all the ingredients and juice of one lemon.

  4. Stir well and place your heat on medium-high to allow the mixture to boil away but not burn the bottom!

  5. After 15 minutes have a taste, I added in the juice of the second lemon at this point as you want it quite tangy.

  6. Leave to boil on a low heat for another 5 minutes.

  7. Then serve!
