Crispy Za'atar Potato, Brie & Raspberry Vinaigrette Salad
Bringing together two of my favourite salad elements to bring you this fun showstopper salad! Crispy Za’atar Potatoes & my Raspberry Vinaigrette. The potatoes are a good all year round element which can be mixed so well with different dressings. While vinaigrette is interchangeable with other berries.
Ingredients
120g Brie (Broken into small pieces
60g Rocket (half a bag)
50g Baby Spinach
1 Chicory (broken apart)
Salt
100g Pine Nuts
1 Pomegranate (de-seeded)
Method
Add in all your dry ingredients into a salad bowl, including the potatoes and potatoes.
Sprinkle over some salt and then toss the salad around well, till everything is mixed together.
Pour over some vinaigrette and then mix into the salad or pour the dressing over when serving up the salad on a plate.
Alternatively you can layer the salad elements neatly starting with the chicory, then green leaves, potatoes, brie, nuts, vinaigrette then pomegranates.
