Easy One-Pot Chicken Biriyani

If you follow me on Instagram you’ll know about my love affair with my Magimix food processor that I got for my birthday last year. It is incredible! Basically the Rolls Royce of food processors. When Magimix saw how crazy in love I was they kindly sent me their brand spanking new cook expert! It is basically and all singing and dancing version of the food processor plus so much more! From steaming dumplings, to making curries and sorbets, it does everything including this one pot Chicken Biriyani.

Now if you find the colour deeper than a normal one it’s because I’ve added in tomato paste. So it’s like a Biriyani meets Kabsa vibe. Hope you enjoy!

Method:

  1. Begin by toasting your whole spices for 1minutes in the Magimix at 100°c and spinning on 2A. The whole time I am using the CE in this recipe I keep the steam cap off.

  2. Add your sliced onions along with some oil to coat the bottom and place on the stir fry mode for 2 minutes or until the onions have turned a golden brown.

  3. Add in your chicken pieces along with the yoghurt, tomato paste, lemon, salt, baharat, chilli powder, fresh chilli, garlic and ginger. Place it on 1A at 100°c for 6 minutes.

  4. Lastly add in your rice, briefly stir it around on 1A then while it is still turning add in the water and cook for 15minutes till it is cooked through and all the water has been absorbed.

  5. You can serve up with more fried onions, coriander and pomegranates if you fancy!

Ingredients:

  • 300g Chicken Thighs (cut into pieces)

  • 1 Cup of Rice

  • 2 White Onions

  • 6 Bay Leaves

  • 6 Cardamom Pods

  • 2 Cassia Cinnamon Sticks

  • 1 TBSP Cumin Seeds

  • 2 TSP Chilli Powder

  • 2 TSP Baharat

  • 1 Fresh Green Chilli

  • Good Pinch of Saffron

  • 1 TBSP Tomato Puree

  • Salt

  • 1 TBSP Garlic Paste

  • 1 TBSP Ginger Paste

  • 1 Potato

  • 4 TBSP Yoghurt

  • 1 Lemon

  • Vegetable Oil
