Dried Lime, Caramelized Onions & Pomegranate Sprouts

I was always that child that was happy to eat all the Brussel Sprouts at the table. Literally could not understand why nobody else liked them. It’s the one of those things I get super excited for when having a roast . If you’re still a sprout hater or just fancy jazzing yours up then you’ve got to try my very garlicky Dried Lime, Red Onion & Pomegranate Brussel Sprouts! Totally worth eating as a meal on its own ps. I just made your Xmas dinner cuter!

Ingredients:

- 450g Brussel Sprouts

- 1 Large Red Onion

- 1-2 TBSP Dried Lime Powder

- 2-3 Garlic Cloves

- Salt (My Hibiscus Chilli Salt in this is epic)

- 1 Fresh Pomegranate

- Olive Oil or 200g Butter

Method:

1. Fry your garlic till it starts to turn golden.

2. Then add in your onions, leave them to sweat and slightly turn golden around the edges.

3. Throw in the sprouts, followed by salt and 1 TBSP of Dried Lime Powder. Reduce the heat, put the lid on and allow them to steam/cook for about 5mins (check on them so they have enough butter or oil).

4. Remove the lid, taste, if you’re like me and like them really tart add the other spoon of dried lime.

5. Sprinkle over the pomegranates and give them a quick fry off and serve!
