Grapefruit, Orange & Burrata Salad
Ingredients:
2 Large Oranges
1 Large Pink Grapefruit
1 Burrata Ball
Salt
2 TSP of Fresh Lemon
Handful of Pistachios
Half a Pomegranate
Few Sprigs of Mint
Some Physalis if you are feeling daring!
Spring is in the air and Summer is hopefully around the corner! Everyone is in search of an ‘Instagrammable’ salad and I think I have just the answer to that. My Pink Grapefruit, Orange & Burrata Salad! It’s full of pretty bright colours, simple to make and has an array of textures that are sure to please everyone.
I always find that people feel the need to incorporate something green or leafy (although I have some mint leaves in mine, that was mainly for the aesthetic, Instagram made me do it!) . For me the combination of fruits and vegetables in their raw form make up the perfect salad - ps. I HATE LETTUCE.
I chose Pink Grapefruit as I find them slightly less bitter to the white ones. However, if you prefer the other then go ahead and use it. I find that soaking them in a little salt water helps to pull out the bitterness if you really can’t handle it, otherwise feel free to stick to just the oranges in this.
The burrata creates the perfect balance of savoury to these sweet and sour tastes happening in the dish. If you are not a fan, then Feta is a great addition sprinkle into this.
I finish mine off with a few sprigs of mint, which actually do enhance on the flavour (and contrast in colour tones) , as well pomegranates and pistachios which make up some wonderful textures to this dish.
You can whip this up perfectly in about 10 minutes, fuss free and great as a lunch main or a dinner side. Hope you enjoy!
Method:
Peel the skin off your Grapefruit and Oranges. Cut thinly into slices.
Combine in a bowl with the Pomegranate, Pistachios & Mint.
Add in the Salt and Lemon and toss to incorporate.
Serve with Burrata.
Simple as that!
