Grilled Mango Chicken Thigh Burger

Mango Chicken Thigh Burger, Grilled Halloumi, Pineapple & Caramelised Onions. The juiciest, tastiest chicken burger you’ll have! Big words but this is GOOD. Made all in my epic 3-in-1 Cook In by Cuisinart. From grilling, frying to steaming this machine has become a dream in my kitchen. Personally LOVE how non-stick it is!

Cooking tips:

  • You can make the marinade in advance and freeze your chicken inside of it. I personally do it this way as the flavour intensifies!

  • Only use chicken thigh, I hate the breast and you’ll never get the same texture and taste.

  • When grilling, pour the marinade all over. Some of it will caramelise on the pan but don’t worry it’s super easy to wash off.

Additional Fillings

  • 1 Red Onion

  • Olive Oil

  • Halloumi

  • Tinned Pineapple Slices

  • Brioche Buns

  • All your fave burger trimmings

Ingredients

Chicken Marination

  • 250ml Alfonso Mango Purée

  • 1 TBSP Baharat (Bibi’s one of course)

  • Salt

  • 1 Lime

  • 2 TBSP Onion Powder

  • Handful Fresh Coriander

  • 1 TBSP Garlic & Ginger Paste

  • 1 TBSP Ground Black Pepper

  • 1 Green Chilli (Chopped Fine)

  • 4-5 Boneless Chicken Thighs

Method

  1. Begin by sautéing your onions in the deep pan on a medium to high heat, till they are golden and browning. Set those aside then switch to your grilling plate.

  2. For chicken marination add all the ingredients together and submerge the chicken inside it. I leave mine overnight in the fridge or in the freezer for a couple of days to let the chicken absorb as much flavour. You can also do this on the day of cooking too.

  3. Once marinated place the chicken pieces onto the griddle part, making sure it is hot. I then pour over the excess marinade, place the glass lid on top and leave it to cook, checking on it after 5mins before turning over to the other side.

  4. Once the chicken is almost cooked, push it to one side of the griddle and then add on your pineapple and halloumi, these will need about 1-2mins on each side.

  5. Toast up your bread, spread on some butter, build it up with lettuce, tomatoes, followed by your chicken, pineapple, halloumi and onions.

  6. Put on the top bun, grab some fries, remember to steam some greens in the steamer basket (5 a day guys!), serve it up with some fries and let the juice dribble down your face with each bite!
